#sundaysetup: chicken salad stuffed tomatoes

Is it just me or are tomatoes starting to look and taste like summer.

And the grass is so stinking green! Forgive the sunshine blast, I did spend an entire week in bed not leaving my house, so everything is a-mazing right now. But come on, spring is why we live here, right?

Since I had a little too much time scrolling on my phone, I saw this from Meg’s Healthy Balance:

Both of which made chicken salad (and why have I never put it in a tomato?) the first meal I had to have once feeling better. Even after a week of not being in the kitchen, I just so happened to have all the ingredients, which qualifies this recipe as easy and perfect for #sundaysetup.

Have you ever made your own mayonnaise? It’s easy and delicious but also made with whole ingredients: eggs, oil, mustard, lemon juice, and a little bit of salt. While I’m not suggesting you all want to do this, my point is that real mayonnaise has real whole food ingredients.

Over the years, mayonnaise has gotten a bad rap but read your labels and look for a similar short list of ingredients. A little mayo goes a long way to add flavor to your recipes.

Chicken Salad Stuffed Tomatoes

Serves: 3
 
Ingredients
  • 1 cooked boneless skinless chicken breast chopped into bite size pieces
  • 2 tablespoons mayonnaise
  • 2 tablespoons of plain greek yogurt
  • ½ teaspoon yellow mustard
  • 2 teaspoons chopped herbs (I used basil but tarragon or dill would be great too!)
  • ¼ cup chopped celery
  • 1 teaspoon finely chopped scallions
  • Salt and pepper to taste
  • 1 tablespoon toasted pumpkin seeds
  • 3 tomatoes
Instructions
  1. To prepare the tomato cups, cut off the tops of a tomato and gently cut out the core of the tomato, opening up the seed cavities.
  2. Using your fingers, pull out the seeds and insides of tomatoes until they are seedless and hollow.
  3. Set upside down on a paper towel to dry while you mix the salad.
  4. In a small bowl combine chicken, mayonnaise, yogurt, mustard, herbs, celery and scallions. Mix gently and add a bit of salt and pepper to taste as desired.
  5. Fill your hollowed tomatoes with chicken salad.
  6. Sprinkle with toasted pumpkin seeds.
Makes 3 lunch size servings.

  • Chicken salad stuffed tomatoes x 2 = 6 lunches
  • Grilled chicken thighs and steamed green beans with lemon wedges = 1 family dinner and 3 prepped lunches or dinners
  • Ground turkey burgers with grilled peppers and salad greens = 1 family dinner and 3 lunches or dinners
  • Prepped kale and salad greens, white wine vinaigrette, red pepper strips, cherry tomatoes, hard boiled eggs, and extra chicken. = 10 salads and/or snacks
  • Energy bites with almond butter for the whole family – 36 bites!
