#sundaysetup: eggs every way

Eggs and more eggs. How appropriate, eh? If you are like us, we often get to the actual dyeing of easter eggs the day before Easter, not true, on Easter. (But that’s the old us, already hard-boiled. 👊)

Eggs Every Way

Whatever your Easter traditions are, you might not be spending your day thinking about your week to come. For #sundaysetups like this, options are essential so you don’t go off the rails and eat pizza every other night. (But that’s the old us, not going to happen.💪) 

1. You can borrow Dawn’s post vacation survival set-up:

  • Blackberries, blueberries, raspberries, strawberries, apples, green juice
  • Snap peas, green beans, tomatoes, salads
  • Almonds, hummus, avocados, hard boiled eggs

Etc. Done. High Five. No regrets.

2. You can eat eggs.

I don’t know what to tell you if you don’t eat eggs. Learn to eat eggs? I don’t mean to be bossy or mean, but eggs. They are kind of the survival of all survival kit essentials, and I highly suggest you do not give up on them or yourself + eggs.

Christine makes these egg muffins for her Sunday Set-Up and pairs them with a side of roasted sweet potatoes for breakfast. Notes from Christine: 

“I make them keep for the week – I freeze them. So when I prep on Sunday I leave 2 or 3 containers in the fridge, and the remainder go in the freezer. I don’t recommend freezing for long periods of time – they get dry, but for just a few days they do just fine in the freezer.”

Basic Egg Muffin Recipe

Serves: 6
 
Ingredients
  • ½ lb turkey sausage browned (make 1 lb and freeze half for later)
  • ⅓ cup chopped onion
  • ⅓ cup chopped celery
  • 12 eggs
  • ½ cup milk
  • pinch of salt and pepper
Instructions
  1. Preheat oven to 350°.
  2. Mix together browned sausage, onion, and celery. Divide evenly between 12 greased muffin cups.
  3. Whisk together 12 eggs, milk, salt and pepper.
  4. Pour over sausage mixture in muffin tins.
  5. The muffin cups will be very full, they won't overflow.
  6. Bake at 350 for 20-22 minutes.
  7. Variation #2: Skip the onion and celery and add taco seasoning (homemade spices or store bought) when you brown your meat. Again, you can make a pound and freeze half. In a small bowl mix ½ lb taco meat with ⅔ cup chopped tomatoes. Divide evenly between 12 greased muffin cups and proceed with the recipe. Add avocados, salsa, lettuce, etc. as you wish.
Options are endless.
Serves 6 - 2 muffins per serving

Basic egg muffins

Brianna scrambles 30 egg whites at a time, sometimes leaving 2-3 egg yolks, and an entire 9 oz bag of spinach. This gives Brianna 5 meals worth of eggs and lasts for 3-4 days.

I like to put an over-easy egg on almost any bowl of hot food or cold salad. Honestly, this took me getting used to, I never used to like over-easy eggs. Now it’s the easiest way for me to make a meal. So good, and so many options. Like last week’s cauliflower rice with an egg and avocado.
